Coconut Raisin Snack

  • raisins

  • coconut flakes

Simple snack created by my dad. Something we always had as children. So nutritious and delicious! 

 Zucchini Coins

  • 2 zucchinis sliced

  • 1 minced garlic cloves

  • olive oil

  • nutritional yeast

  • S&P

Preheat over to 400F. Mix in bowl to your preference. Spread evenly on baking sheet. Cook for 20 minutes or until desired softness/crispness. 

Tofu Shish Kebabs

  • 1 package of firm tofu


  • red onion

  • green, orange, & red pepper

  • mushrooms

  • zucchini

BBQ & skewers


Marinate tofu in preferable vegan sauce for 2-4 hours in fridge. Chop veggies into square like formations. Add to skewer along with tofu.

Poke Salad Bowl

  • romaine and spinach mix

  • edamame

  • red onion

  • avocado

  • tomato

  • baked sweet potato cubes

  • toasted pecan parm

  • 1 garlic clove

  • 3 tsp. nutritional yeast

  • sesame seeds

  • lemon wedge

  • olive oil

  • white vinegar

  • S&P

  • copped cashews

Wash and mix romaine/spinach in bowl. Slice/chop red onion, avocado, & tomato. Microwave edamame (partially covered) with a splash of water on top. Peel and chop sweet potato cubes, place on baking sheet and drizzle olive oil everywhere, add S&P. Place in oven for 12-15mins at 425F. Crumble 1 cup raw pecans in a bowl using hands, mix with 1 minced garlic clove, 3 tsp. nutritional yeast, drizzle olive oil, and sprinkle salt. Place in oven for 10-12mins at 300F. Mix all toppings on top of romaine/spinach. Drizzle olive oil and vinegar on top. Finish off with sesame seeds and chopped cashews.
